Dec 2, 2012 - From staff reportsNostalgia Bistro chef kicks off the dining series with a festive mutli-course menu.
The first Dubois Main Street-sponsored Taste of Dubois, featuring a Victorian Christmas theme, is set for Saturday, Dec. 8, at Nostalgia Bistro in the historic Ramshorn Inn at 202 E. Ramshorn St. in downtown Dubois.
Nostalgia Bistro executive chef Shannon Chandler is preparing a multi-course menu featuring a slow-braised Snake River Farms pork shoulder with a hazelnut brown ale pork reduction and cheddar-sage bread pudding. A Buffalo Jump Wines representative will provide wine pairings and pour wine during dinner.
An appetizer course features oysters on the half shell with an apple mignonette or oysters baked with bacon and leeks. The festive menu continues with a salad of winter greens with roasted beets, walnuts and fried goat cheese topped by a cranberry port vinaigrette.
Dessert is a choice of ginger pear upside down cake with lemongrass caramel sauce or a mini pecan pie with a bourbon infused whipped cream.
A Victorian Christmas begins at 6 p.m., but diners should check their dinner reservation for the specific time to begin their unique dining experience.
The Nostalgia Bistro's event will also feature an as yet unannounced local group playing Christmas music. Everyone is encouraged to dress in their holiday finery.
The Dubois Chamber of Commerce participated in the promotion by encouraging motels to offer discounted motel rates during the weekends when a Taste of Dubois event is being held.

A local restaurant will be featured by Taste of Dubois every other month through early June.
A total of four to five restaurants are expected to be featured before the 2013 summer season begins. At the end of the first season of Taste of Dubois restaurant promotions, diners will be asked to vote for their favorite entrée.
